Grant Burge Icon wines are named in honour of Meshach Burge, the great grandfather of founder Grant Burge who began an enduring family winemaking tradition, and the biblical origins of his name. Shadrach, one of Meshach’s fellow pilgrims in the bible, represents the best Cabernet Sauvignon from Grant Burge Wines.
WINEMAKING
The Cabernet Sauvignon for Grant Burge’s flagship Shadrach is sourced from Barossa vineyards where the conditions are perfect for growing super-premium Cabernet Sauvignon with great finesse, intensity and structure. The fruit for the Shadrach is sourced from the Corryton Park vineyard, high in the cool-climate Eden Valley in the Barossa Ranges, and blended seamlessly with fruit from the Barossa Valley floor with its concentrated rich fruit flavours.
The wine underwent traditional fermentation in stainless steel static fermenters with a portion of fruit left on skins to undergo extended maceration to develop its complexity. The balance underwent primary and malolactic fermentation in predominantly French oak, and then matured in new and 2 to 4-year-old oak for a further 18 months.
